Why do solar heated homes use water to store solar energy or why do a lot of apartments in the city uses water?

I dont understand the second part of your question, but for the first part, water has a very high specific heat (1, compare to for instance a metal that have fraction of that value) which means more energy can be stored in water without raising its temperature too high. (thats why our planet have very stable temperature, thanks to the sea, in the moon for instance the temperature can vary as much as several hundreds of degrees from shawdow to sunlight)

Water is probably used because it’s inexpensive and convenient. Liquid-based solar collectors actually use a variety of fluids, such as, antifreeze mixtures, thermal oil, or other fluids. In other words, they don’t all use water.
